Fat Friday

I can't remember if I had blogged this recipe before but its worth a repeat. A few years ago for my mother in laws birthday she requested a carrot cake. Two things you should know...

1. I don't like carrot cake.
2. I had never made a carrot cake.

I was about to make a carrot cake... from scratch. No box cake here. I was going all out. I was not really even sure where to begin. I just knew that's...

1. what Mrs. Debbie wanted
2. I love to bake
3. I love to fatten people up with food

...so I was on a mission for a great recipe. Then it hit me. Who has no doubt the best dessert recipes?... Sure they include 10 sticks of butter... but aren't they worth it? Yes, that's right, Paula Deen. So I went to her site and sure enough found her recipe. And it seemed do-able. Perfect.

I will say not only was the recipe easy, so was the homemade icing... well my icing still looks more like an avalanche happening than perfectly spread icing, but it's the thought that counts, right?

Then it was time for the real test: Did it taste good?

Now seeing how I hadn't really cared for carrot cake... I mean who wants a vegetable in their dessert?!... I knew my opinion shouldn't really count. I was eager to hear the response from my fellow birthday celebrators... and....

Success.

They loved it. I even loved it. It's not my favorite and I don't crave it like other desserts, but I certainly would make it again. In fact, for her birthday 3 years in a row now that's what she has requested. Well, I should clarify this by saying, Mrs. Debbie said she didn't care. She loves any dessert. And when I asked her to narrow down the options she mentioned that she liked the carrot cake... and fudge, but that's only because she's a real American who appreciates good fudge.

So all that to say... here's a great carrot cake recipe even for those who don't really like carrot cake.

  • Butter, for pans
  • 2 cups all-purpose flour, plus more for pans
  • 2 cups sugar
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 4 eggs
  • 1 1/2 cups vegetable oil
  • 3 cups grated carrots
  • 1 1/2 cups chopped pecans, optional
Frosting:
  • 2 (8-ounce) packages cream cheese, room temperature
  • 1 stick salted butter, room temperature
  • 1 (16-ounce) box powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans
Preheat oven to 350 degrees F. Grease and flour 3 (9-inch) round pans; Line bottom of the pans with parchment paper.
In a large bowl, combine flour, sugar, baking soda, cinnamon, and salt. Add eggs and vegetable oil. Using a hand mixer, blend until combined. Add carrots and pecans, if using.
Pour into pans. Bake for approximately 40 minutes. Remove from oven and cool for 5 minutes. Remove from pans, place on waxed paper and allow to cool completely before frosting.

For the frosting:
Add all ingredients, except nuts, into a medium bowl and beat until fluffy using a hand mixer. Stir in the nuts. Spread frosting on top of each cake layer. Stack the cakes on a serving plate and serve.

*I have always been weird and not really cared for layered/tiered cakes. I like the simplistic way of eating a cake cut out of 9x13 pan.... which works in my favor with my avalanche icing. So I just cook my cake in a 9x13 pan. You will have a ton of icing this way, but I'm an icing girl so I don't mind... avalanche and all.

She's Here!

Riley Paige finally made her grand entrance into this world around 5:57p.m. yesterday, December 10th. Kacie went in to be induced around 5:30a.m. After lots of poking they finally got her pitocin going around 7:30. She began having some contractions, they broke her water and then gave her the epidural around 10:00a.m. This was what she looked like after the epidural. She looked fabulous.

 The doctor continued checking her every couple of hours and Riley was clearly in no hurry. Kacie in fact was so comfortable she slept pretty much all afternoon. Finally sometime after 5:00 they decided to go ahead and do a c-section because she had not gotten past 3.5 cm. We were dying to see this baby! This mamaw was phenominal all day. I thought for sure she'd be a nervous, antsy wreck. She is actually BeBe (pronounced BeeBee), but we call her mamaw because she hates it so much. :)

 After what seemed like HOURS... the nurse finally came out and said Kacie and Riley were both doing great. Jeremy had left his phone in their room so he couldn't contact us. The nurse wouldn't tell us any details other than Riley was beautiful and that there was no way she would have come on her own... meaning she was big!

Jeremy came out a little while later with the camera and we were introduced to the most precious chunky face. She was gorgeous! And we were dying to see her and Kacie!

Finally around 9:00p.m. the staff allowed us back there. And this is what we saw.






















I know I am biased, but she is GORGEOUS! And perfectly chubby! We are so in love!

Fat Friday

I found seriously the easiest cobbler recipe ever. And really it shouldn't be included in Fat Friday b/c technically it's a weight watchers recipe so it isn't terrible for you. I didn't tell the people who ate it (particularly the men in my life) until after they had eaten it and they were shocked.

Berry Cobbler



Ingredients:
Two 12-oz bags frozen mixed berries
1 box white cake mix
1 can of diet sprite (I used sprite zero)

Directions:
-Place frozen fruit in a 9x13 baking dish.
-Add dry cake mix over the top.
-Pour soda slowly over cake mix. DO NOT stir the cake mix and the sprite. This will give you a 'crust'. If you stir the two, you will have a cake like topping.

Bake 350 for 45-50 min.

Serves 16; 4 WW Points Plus

Riley Jean!

Ok, her name is actually Riley Paige, but for whatever reason when I say Riley I feel all country like I need to add Jean to it. This opening sounds like she's been born. Sorry to disappoint. To my knowledge she has not and if she has people will have some serious explaining to do.

She is not here yet, but she will be soon. If Kacie does not have her by Sunday then they will be inducing her on Monday... which means this is our last week without ole Riley Jean. Kacie really will shoot me if I keep calling her baby that, (unless she's hoping I'll watch Riley while she sleeps, or clean her house or cook for her.. ... then she may reconsider...) but I seriously can't help it. It just fits... sister, you chose the wrong middle name. Paige is much cuter, but Jean flows better.

So we covet your prayers in the next several days as we await the arrival of our precious little Riley Jean.. (I mean Paige)... Wilbur.

My biggest fans

Don't worry. I didn't forget about my biggest fans and supporters. I truly believe this run was one of my best and easiest because I knew these people were waiting for me at the finishline.















They even decorated their car.














I am so thankful to have such a great support system. Thank you all for loving me and coming to cheer me on!

My dad has never missed any major thing that sister and I have had going on. He hated that there was a work conflict that he couldn't get out of. He wasn't able to make the race but met us at lunch.

I am beyond grateful for these people.

St. Jude Half Marathon

My last pre-race post was about it being expo day. We had such a great time getting our things. It became real when I pulled out that number and then activated it... in fact I was activated as Donna Sue Brigham, age 43 because I bought a friends bib. It didn't matter, I was Donna and my bib was activated. It was a 'this is really happening' moment.

Though we were beyond excited, we couldn't shake the nerves of the unknown. We knew we were as prepared as we could be, but 13.1 is a long run... for us. This was a big deal that not many people ever even attempt in a life time and here we were about to tackle the challenge in 2 days. So we walked around the expo looking to see if there was any gear we thought would benefit us. They were selling all kinds of different running apparel and we thought we'd browse through. The weather was crazy warm, but that morning when we'd be getting there would be cold, so we were baffled as what to wear.

Enter sleeves.

Except mine were hot pink and allie's were bright blue. These were perfect. we wore fitted capris, short sleeve shirts and these sleeves. Then when we got hot we just pushed them down.
 
Yes, we were less than 48 hours away and couldn't believe it...
Friday night we had a pasta party at allie's. We lounged around in comfy clothes and ate pasta and bread. Then we enjoyed cobbler and coffee. It was fabulous. Having not done this before, it seemed to be the perfect way to prepare for race day. (and now being on this side of the race its was for sure!) We just relaxed and went through the details of the next morning: what we would need, where we were meeting, details of the course, etc. I headed home about 9:00p.m., laid out everything I would need for the next morning and was in bed before 10:00p.m. I really slept well (unlike allie who got maybe 2 hours all night!) and when the alarm went of at 4:00a..m. I snoozed it more than once. :) I needed to pick allie up at 5:45 and I wanted plenty of time to make sure I had everything together without being rushed.

We were on the interstate heading toward downtown at 6:15. We had everything we needed with us. Now it was just a matter of time. We parked on Riverside and made the short walk to the start line where allie had a group picture at 6:45. She was running as a hero for a little boy named Ingram. After the picture we walked around trying to loosen up.

8:00 the first group was off. 10 minutes later our corral  crossed the start line and we were off. 16 weeks of training, countless drops of sweat, crazy early morning runs, Saturday long runs all over the city... and now it was time to put that training to use. Miles1-4 were exhilarating. There were crowds of people almost continually. Beale Street was the best. You seriously felt like a super star. I was humbled by the encouragement, cheers, and high fives from total strangers. Miles 4-5 were when we ran through St. Jude. I began to tear up as we passed under the balloon canopy. What an amazing hospital that is doing wonderful things for these precious sick kids and their families.  Though there didn't appear to be many patients out, there were still tons of grateful families encouraging us. Miles 6-8 were a little boring down parkway, but we saw so many fmailiar faces that it was energizing. Mile 9 Allie began to not feel well.... or at least thats when she voiced it. She is always the one pushing me. She's much faster and it is always a great challenge for me to keep up with her. So when her steps were slower I knew something was up. She did great but expressed she was feeling dizzy and nauseaous. We slowed down our pace for miles 9-12. Then we saw the entrance to autozone park. We were home... we were a mere mile from reaching the goal we had been working hard towards for 4 months. All those hot, humid runs, all the sore musles, all the feelings like I was going to barf in someones yard... all was worth it in that moment. We ran the last 100 yards with a smile from ear to ear.



We entered into the outfield of autozone park with hands held high.... We did it. Not only did we train to run 13.1, but we finished it and finished well.

Our finishing time was 2 hours and 17 minutes. With Allie 100% I'm certain we could have finished under 2 hours. Guess we'll just have to run another one and prove it. I def. have the bug now. I loved every second of that race. I loved the challenge of the distance, I loved the hills, I loved the crowds, I loved running with my buddy who had trained and challenged me for so long. And now... I'm ready to do it again.
