Try it Tuesday

By Jules request, here are the recipes for the sweet potato casserole and cowboy caviar. I used to never like sweet potato casserole. Now I can not imagine my life without it. Also, this cowboy caviar is by far my favorite dip now!

Grandmomma's Sweet Potato Casserole

3 cans of yams

1 cup of sugar

1 tsp of vanilla

2 tsp of cinnamon

1 egg

1 cup of milk

1 stick of butter

Combine butter and yams in a microwavable bowl. Melt butter. Mix with mixer until yams are smooth. Add other ingredients. Pour into 9x13 pan.

Topping

1/3 cup of flour

½ cup of brown sugar

1 stick of butter

1 cup of chopped pecans

1 bag of large marshmallows

Mix together and sprinkle on top of sweet potato mixture. Bake at 350 for 15 minutes. Take out and line marshmallows on top. Bake for 20 more minutes or until marshmallows are gooey and brown.

*Most people either do just the nut mixture or just marshmallows… my hubs likes both so we combined them. It was a hit.


Cowboy Caviar

1 yellow pepper

1 red pepper

1 green pepper

1 onion

1 can of black beans

1 can of pinto beans

1 can of white corn

1 cup of sugar

3/4 cup of apple cider vinegar

¼ cup of olive oil

1 tsp salt

1 tsp of pepper

Heat in a small saucepan: apple cider vinegar, oil, and sugar until all the sugar is dissolved. Add salt and pepper. Set aside

Chop up peppers and onions. Drain cans. Combine in a large bowl. Add sugar mixture. Stir well. Chill before serving. Can be used as a dip with tortilla chips or just as a crunchy side.

  1. the sweet potatoes are canned yams i thought they were real potatoes!

  2. no grandmomma uses sweet potatoes, but she said you couldn't really tell that much of a difference. So I tried it and you couldn't! So its the easier way!
